Roasted Cauliflower
1 head cauliflower, cut into bite-size pieces
3-5 cloves garlic, minced
1 tablespoon olive oil
salt and pepper to taste
Place the cauliflower and garlic on a baking pan (I use a cookie sheet). Toss with the olive oil and spread in a single layer. Sprinkle with salt and pepper and bake at 450 degrees for about 20 minutes or until lightly browned.
Julie's Notes: I recommend using parchment paper on the cookie sheet--makes clean-up much easier.
The only way I'll eat it. I've tried to convert many a nay sayers telling them they'd love it this way. Even my kids will eat it! Will try it with the garlic, usually just do salt and pepper!

ReplyDeleteI'm deeming 2011 the year of the cauliflower - I've heard so much lately about how delicious it is roasted! I'll have to try your parchment paper trick too - love anything that makes clean up quicker!
